Fruit & weet-bix slice

1 cup sugar
1 cup SR flour
1 cup coconut
1 cup week- bix ( I sometimes put extra, maybe 1 1/2 cups)
1 cup mixed fruit
2 eggs
1/4 lb margarine or butter

Combine all dry ingredients

Melt margarine & pour over dry ingredients

Add beaten eggs with a fork

Cook at 180c for 25-30mins., till brown on top.

Boiled Fruit Cake

Boil together for 3 mins.,
120g butter
3/4 cup sugar
1 cup water
550g mixed fruit PLUS extra cherries

Then add
1/2 cup port or sherry. (I add port tastes so good.)
1 teaspoon bicarbonate soda
Allow to cool

When cool, sift together & add
1 cup SR flour
1 cup plain flour
1 teaspoon allspice

Then add 3 beaten eggs

Bake 180 c for 1 hour or until cooked when tested. ( I cook the cake in a greased & paper lined square tin )

Shirley, my other half LOVES apricots so the other day when I made the apple slice he said it was very nice but then asks 'Can it be made with apricots?"
He asks if everything can be made with apricots :roll:
He is away grading today so I thought I'd have a crack using tinned apricots and assumed they would be too soft and turn to mush when mixed. I quartered each half :lol: (that tickled my fancy, never mind, move along) and they held together ok and I have had one, no two :oops: pieces and it's very tasty.

I haven't been far away Janelle. We've been relocating my day job factory for the last 2wo weeks so hours have been a tad short.

Apricots Huh ?
Ya know, I thought the exact same thing about Shirleys slice, I luv apricots as well.
We'll grab some tomorra if we can and give it a bash.

Meanwhile, I'm gonna ring MrBolly then bolt back out to the fire.

It's the easiest thing I've ever made, 5 ingredients, two steps. No, three. Oh, bugger it, it's just easy! Try to get real apricots. Yes, I know they are all real. I mean apricots from the fruit and veg department, with stones inside. Having said that though, tinned worked fine, just be gentle when stirring.

Fire drum. Isn't there an Aussie song about a fire drum? Is it Paul Kelly? Let me just go Google the lyrics and see if I'm on the right track.

It's Rally round the Drum, co-written with Archie Roach, about a fighter in a boxing tent. I don't know what type of drum the drum that they are rallying around is but let's pretend it's a fire drum :D
