Try these
Old fashioned Tomato Sauce
2kg tomatoes
500g of sweet apples (golden delicious)
500g of onions
4 tablespoons of whole cloves
2 " " " allspice
1 1/2 " " black peppercorns
2 " " salt
500g of sugar
1/4 teaspoon of cayenne pepper
1 & 1/4 cups of malt vinegar
Coarsely chop unpeeled apples & peeled onions.
Tie cloves all spice & peppercorns in muslin. Combine all ingredients in a large saucepan, bring to the boil & cook uncovered for an hour.
Put the sauce through a mouli. or rub as much as possible through a sieve. Mix the sauce well, then pour into warm clean bottles & seal.
Makes about 2 litres.

This is really well worth the effort...I made this old recipe when I had Simply Natural fruits & it was one of my top sellers.
Tomato Relish
2kg of large ripe toms peeled & sliced
750g onions peeled & sliced
salt
12 small red chillis crushed
2 cups malt vinegar
2 1/4 cups brown sugar
1 tablespoon of curry powder
1 1/2 " mustard powder or commercially made whole mustard
1 " of flour
Layer toms & onion slices in a large bowl. Sprinkle all over with a little salt & leave o'night.Next day drain liquid & place vegetables in a saucepan with the chilli's & 1 1/2 cups of vinegar. Heat to boiling then boil for 5 mins.
Mix sugar, curry powder mustard & flour in a bowl. Stir in remaining 1/2 cup of vinegar to make a smooth paste. Stir paste into the veges.Cook slowly ,stirring often for one hour.
Spoon into hot clean jars & seal.
Makes about 2 litres

Sweet red pepper relish
4 good sized red capsicums washed & de seeded.Chop roughly
3 red med onions sliced.(Cover well with salt & leave in a bowl for at least 2 hrs before cooking.Must be softening..then place salted onions in a sieve & wash thoroughly.Place all ingredients in a pot along with.......
1cup of sugar( you can used brown sugar for a better taste)
1cup apple cider vinegar ...a little more can be added if mixture is too thick while cooking.DON'T make it too runny though.!!
Cook for about 1/2 an hour until onions & capsicum are soft.
Leave to cool then chop up in whiz to suit .Finer is also good for a dipping sauce.
Pack in hot sterilized jars ( pre heated in oven 100,* for about 10 mins)
Can be used immediately.

Why aren't you growing your own? We don't appear to have any muslim in town Dottie, can we substitute anything else? Wouldn't they put up a bit of a fight tying that stuff to them and the boiling them for an hr? I reckon some of them would get upset just with the being uncovered for an hr ...... the things they got away with back then, I doubt we'd get away with these days

T1, I used to grow most of my veggies but gave up with the tomatoes after the invasion of the famous QLD Fruit fly. They are into everything. Tried a number of different methods for removal. None successful. We used to get cherry tomatoes and some pumpkins from the old workplace. Just needed to give them a good wash before eating them. Our home now looks like a pumpkin farm apparently, will have to wait until we get home to see.
Can't wait until lockdown is over.

Build an aviary and breed Finches. Then grow you fruit and veggies in the aviary. Just had some devastating news. The manufacturers of Wilds Ezy-sauce, known Australia wide by all the sauce makers is no longer being supplied. So, all our budding cooks, if you see some anywhere, grab it while you can.
