That would be "B" and Rose hill, although Sydney town was the first established settlement, but the first town other than Sydney was Rose hill, followed by Parramata

January 26 was the day the first fleet moved from Botany Bay up to Port Jackson. Which is where Capt Philip named the colony Sydney Cove.
I have no idea when the first beer was brewed in Australia,yet. But I will check.

I'll allow 'Sydney Cove', although that was the name Phillip gave to the bay. (see below)

Had you searched "Sydney" on Wikipedia, read further down and clicked 'History', you would have read the following:
Captain Phillip led the First Fleet of 11 ships and about 850 convicts into Botany Bay on 18 January 1788, though deemed the location unsuitable due to poor soil and a lack of fresh water. He travelled a short way further north and arrived at Sydney Cove on 26 January 1788.[44][45] This was to be the location for the new colony. Phillip described Port Jackson as being "without exception the finest harbour in the world". The colony was at first to be titled "New Albion" (after Albion, another name for Great Britain), but Phillip decided on "Sydney".

So the First Fleet actually arrived in Australia on 18th January 1788.
This account is also supported by Captain Watkin Tench of the Royal Marines (effectively, prison guards for the new colony) whose account of the new colony was the first to be published in London.
