Duck Korma With Peas

Tonights dinner. These come up well in a camp oven.

Ingredients
1/2 jar PATAKS korma curry paste
1 diced onion
2 teaspoons grated ginger
1 400 ml can coconut milk
3 tablespoons thickened cream
1/2 cup peas
1 teaspoon sugar
2 fresh duck breasts
Salt & pepper

Method
Score duck across the skin, sprinkle with salt and pepper and bake in the oven to your liking. I like duck well done so 35 minutes for me. Set aside.

In a deep pan fry the onion in a little olive oil until soft. Add the ginger and half the jar of curry paste and stir fry for several minutes until aromatic. Add 50 ml of water and continue stir frying until water has evaporated.

Stir in the can of coconut milk, cream and sugar. Bring back to the boil and add the peas. Simmer uncovered for 15 minutes.

Slice the cooked duck and stir it through the curry sauce. Immediately remove from heat.

Serve with rice.

Yummo, sounds great, can you use chicken instead of duck? And when made is it ok to freeze? Got to start getting frozen meals up if we are going to get away this year... While I have my soups and custard rubbish...PS Derek , got some soup recipes?

Use any meat really, also prawns. Yes, all curries freeze well.

Missed this the other day. This could be either a stew or a soup. If you want it more soupy add more stock/water. I have also been known to pour in a good glass of white wine.

Ingredients
8 chicken thigh fillets - diced
2 carrots - chopped into chunks
1 leek - sliced
2 sticks celery - chopped
4 potatoes - chopped into large dice
2 cups chicken stock
Thyme
Salt & pepper
2 teaspoons cornflour

Method
Place chicken, stock, carrots, celery, potatoes and leek into camp oven.  Add sufficient water to fill the oven up and bring to a simmer.  Season with salt and pepper to taste then sprinkle over thyme to taste.

Cook for an hour. 

Mix cornflour with 2 tablespoons of cold water to a paste then stir into stew to slightly thicken.

Yesterday I out did myself.
I made the chick soup but to be safe I blitzed it and it is very niiiiiice, just had a small bowl full then froze the rest for when we get away.
Also made the Korma duck curry but used chook instead and also froze that as well, after G had a few spoonfuls.
