At home, it is used daily for heating n cooking stuff. In the van? that's a different place. It is the best wall safe around. All my travelling bag of jewellery , tv remotes, the clock radio and anything else that will fit, all go in it while we are mobile. It is a very useful extra cupboard, oh and sometimes I really do use it to heat up the odd leftover for dinner, but not very often at all.
We used ours a lot, till we saw the microwave and plant experiment. We believed the results for quite some time. Then I checked it out on Snopes, seems it's all baloney. Although we now know the story was not true, we still use the microwave very little now. Heat the frozen pies at lunch time before putting them under the grille, maybe melting butter before cooking with it, but that's about it. Pity, we have plenty of power to be able to use it now, but we prefer the induction cook top.

We just had to have a new LG SolarDOM Light oven. I explained that it was ridiculously expensive and too heavy at 26kg and far too big at 36 litres but we HAD to have one. We, read as I, have a rule that when anything new goes in things of equal weight come out and as tools and spares are essentials I always look at the galley first . Anyway, I reinforced the stand where it lives and in it went. After about a year of very little use, I think we cooked one rack of lamb and our normal occasional use for frozen vegies I convinced SWMBO that we would get better use from it at home, so back out it came and in went a 20lt el-cheepo microwave (we gave the one the LG replaced to our daughter). Now I am considering a Kogan 25lt convection microwave but this discussion may give rise to a re-think
We also store our bread in it when not zapping things

I use the microwave oven daily at home but as we mostly free camp we found that we seldom used it so we removed it from the bus, can't say that we miss it, we just use the gas stove.
We do still carry an electric jug & electric toaster but last trip we left the electric frypan at home.
Use ours dam near daily when away. Like others, having the lithiums helps! 35 at 9 am, wife still hiding under the air con in the bedroom. Our 6 monthly generator fuel up ran out yesterday, so i figure she has another 2 hrs max with the batteries!
