After reading here, away back a few pages, I decided to give the old porcupine meatballs another go. I try to make everything more low GI these days and a meal in one pot suits me great.
So to a lump of mince I added: an egg, finely chopped onion, grated sweet potato, grated zucchini and grated carrot, large handful of low GI rice, same of whole rolled oats a dash of worstershire sauce (however that should be spelled). In a big baking dish heat up a bottle of spag sauce and a tin of chopped tomatoes. Gently drop in meatballs and put the lot in the oven for a couple of hours.
Voila, dinner with all vegs included and only one pot to wash up.
Sorry Dot, no cabbage leaves were injured in my cooking! Have not tries the cabbage roll version, sounds very different.

Three sausages left over from last night, cold, salad, and jacket pots.

Apple pie ....single, shared, with icecream and cream.

Gregs introduced me to icecream sprinkled with milo! Yum

Steak and chips the steak covered the whole plate....yum.
Kids had chicken chips.

Tbone on the Baby Q, sautéed mushrooms with feta and cannellini bean salad. Yummo!

Crumbed chicken breast, jacket potato, and a mix of 5 different steamed vege's .( carrots, snow peas, beans, broccoli ,zucchini ) Very nice.

It was a 2kg leg & it was cooked on a trivet in a large Turbo Oven.

Started of with the skin up for about 30 mins, then turned over for nearly 1 hour then finally turned back over with skin on top for another 30 odd minutes with the heat cranked up.

About 2 hours altogether... it was a decent size! :D

Yum. I have been thinking about a turbo oven in the next van rather than a built in oven. Is it your or Dot's?
