"TANKS" PUMPKIN SOUP

“TANKS” PUMPKIN SOUP
(No Oil !)

Chop up a brown onion --
Chop up 4 cloves of fresh garlic
and 2 rashers of nice bacon.

Fry these off for a few minutes

Rough chop 3 or 4 potatoes
Rough chop a butter-nut pumpkin
(or Qld Blue pumpkin for stronger flavour)

Fry the spuds and butter-nut pumpkin off for about 5 minutes
then add 2 litres of Chicken stock plus 2 chicken stock cubes
for additional flavour.

Add 1 litre of water plus the spuds and pumpkin.
Bring this all to the boil, and then simmer until the spuds
and pumpkin are of mashing consistency, about 15 minutes.

Remove from stove and let cool down for 15-20 minutes
(drink some liquid refreshment-this cooking is hot work)

When this lot has cooled, mash the solids
and then blend with a stick blender for about 5 minutes
Add lots of cracked black pepper (to your taste)
Stir in 300 ml Thick cream.

Reheat the soup to eating temperature and
Serve/Enjoy with fresh crusty bread.
Sip on a 700 ml bottle of Brown Bros. Cruchin Reisling.

[Have a “Weis Bar” for a frozen desert !]

Sounds interesting, Keith. I've never tried it with bacon before. Looking forward to cooler weather now to enjoy some soup.

I always put bacon in pumpkin soup, I use onion & chicken stock instead of water, Yum, made some last night in fridge waiting to be blended.

Yes, I use onion and chicken stock too but with a good shake of ground cumin as well.

Also try adding half teaspoon of Nutmeg for a different taste !

It was only 8 degrees in the Wheatbelt last night. "Russell" and I are both feeling it.
TIME FOR PUMPKIN SOUP !
And it's get out of here time and head for the warm North of the State. Only a few weeks to go before departure.

I am making/welding a couple of Jerrycan Holders to fit onto the trailer, and also making a weather cover/tarp to fit over the trailer cage.
I plan to make a tire holder/mount, for the trailer tyre which is a 14" rim once I see if my Mig Welding is up to scratch. My Brother-in-Law gave me a few lessons or instructions; turn it on here, this is where the welding wire comes out, it gets hot where you have welded. It's easy ! That's a long way off the subject matter but I do get carried away at times.
The experience in life and ability I have gained since I have joined the RV Mob is outstanding.
