This is one I've made many times and each time it seems to have a different taste, maybe because I vary the liquids.
Try it with apple or orange juice, chocolate milk, lemonade and a coupla splashes of red wine, sherry or anything else in the cupboard.
3 Ingredient Fruit Cake
1kg mixed dried fruit
600ml iced coffee
2 cups self-raising flour
Preheat oven to 180C.
Tip the fruit into a large bowl and add the iced coffee. Leave to soak over night.
Stir in the self-raising flour.
Pour the mixture into a greased cake tin and bake in a moderate oven for roughly an hour or until the cake springs back in the middle.

I have a similar recipe using tea to soak overnight, it's yummy. An old pilot who flew out to our place once, told me it was the best fruit cake he'd ever had. Made my day that.
Stale bread cake thingo......
Gather up all your left over crusts stale bread (as much as you can muster)
brown sugar
egg,
sultanas
mixed spices.
cinnamon,
melted butter
..........................................................
Soak the bread crusts till all soggy, squeeze out excess water, break the soggy bread up and put in a large bowl, add all the other things, mix well, put into a greased casserole dish and add some extra brown sugar and cinnamon over the top. Chuck it into a slow oven for an hr or so, if the sultanas start to burn cover with foil. This is a very moist soggy cake and is best when cold.. I never use measurements so you do your own thing with this one..
If you stick a fork into it when you think it is ready the fork nearly always comes out with stuff on the fork, this doesn't matter as long as it has had a pretty good time in the oven.(1-1and a half hrs)

I think mum's test was if the fork prongs bent it needed another 30 mins..... but that might have been a beef roast
What did you soak the bread in? I seem to remember a jelly mix being involved but that might have been a different dessert altogether........
I seem to remember mum's boil fruit cake having to brew for a while before the flour and baking powered went in, got a clip around the ears for eating some (well maybe a lot) of the mix before it got to the flour adding stage. Christmas involved that running candied fruit being added as well, was instructed to turn the oven off when the clock on the stove rang but I discovered I wasn't supposed to take it out of the oven as well.... another thick ear, but all (except mum of course) agreed it was the best Christmas cake ever because it was still semi raw in the middle, sort of like getting to lick out the bowl with cake edges

Soak the bread in ordinary old water Terry. I usually make this when there are a couple of weeks worth of the ends of the bread in the fridge.. It is meant to be rather moist yet firm.

Easy Apple Slice
2 cups SR flour
1 cup sugar
3 apples peeled, cored & diced. I use Granny Smith, guess you could use tinned apple if you can buy pieces?
125g melted butter
1 egg
Toss apple with SR flour & sugar in a medium mixing bowl
Melt butter in saucepan or microwave, stir in egg & add to apple mixture
Spoon into greased & lined tin.
Bake 180c for 35-40 mins., or until top is golden brown.
Slice can be eaten hot as a dessert with cream or can be eaten cold with a coffee.

Thanks Shirley, I just made this and it was very nice. We had it cold with tinned aerosol whipped cream
When I was making it I thought there wasn't enough liquid, it was a very dry mix, but it turned out well, thanks That'll be one I can make for dessert during muster.
