In the end the easiest fix was to fit a double pole switch in the plug in cable for the hot water and the fridge in a spot that was easy to get to rather than having to remove a large drawer to turn the fridge power point off and pull the lounge seat up to turn the hot water off/on.
This way the fridge can run on 240vac as long as the solar has been good and the air con hasn't drained too much out of the battery to run the fridge over night. If it looks a bit iffy a flick of the rocker switch and it goes onto gas over night, then back on the inverter the next morning if the sun comes out.
The hot water can either be run off the battery/inverter if the air con isn't needed and the sun is shining, or from gas if the solar is required else where.
I could have wired it all up to work automatically, but sometimes it's just easier to let the owner become the operator of such things so they can experiment and see what suits them.
I managed to buy 2 x double pole 240vac rocker switches and remove the single pole switch out of the neat looking white plastic light switch surround and fit these double pole switches in. Fitted them were they were unlikely to be accidently bumped but still look neat.
Maybe Vic can put some photos up, Margaret took a few photos but they are on her phone. I've got her working at the moment so I don't want to interrupt ;)

“If your system is to be stored for one to six months without solar, set the 3-way switch on the T1 Lithium control box to the centre position (ie; 0). This disconnects the battery but leaves the VictronTM and the JunsiTM logger on.
There is no need to bring your battery to 50% SOC.”
