Cooked a 3kg roast leg of de-boned pork on the BBQ for dinner with friends yesterday & during the cooking process the conversation drifted to which is best... male or female pork.

Well... I have never considered whether the meat I was buying was male of female & doubt whether I could even taste the difference. :?

Anyone care to enlighten me?

Can you purchase male or female pork - or any other meat for that matter?

If so, how do you know that the meat you are paying for is in fact what you asked for?

Is there a difference in taste/flavor? Go for it Dot... :lol:

Female pork is the best because of the hormone oestrogen. This is the soft hormone, males have some of this hormone but as you will know the male hormone Testosterone is the stronger (tougher) one. The female pork is also a lighter pink than the male pork and also the smell is not as strong with the female pork. Yes you can ask for female pork but the butchers won't know the difference unless they especially order it. Another thing to consider is the way they are slaughtered, as stress makes the fibres tougher. Never expected such a technical answer did you :?: :?: :D

What happens if they were knackered, so to speak, when they were cute little baby piglets? The same as lambs? I don't know about pork but you can't tell the difference with lamb, especially if it was tender hung at the time of slaughter.

I did hear somewhere that the diet and "living arrangements" between animal species makes a difference as well. :D

:o :o :o Nope!! :shock: :shock: But your explanation makes sense.

Motherhen on CF agrees & said that the younger the males are castrated the sweeter the meat flavour... & I'm assuming that goes for all meats.

If the 'pork' was deboned it may not have even been from Aus. Unless your butcher done it.
Its ilegal for meat bone ON the be inported but no bone its ok, so you dont know what you may or may not have eaten.
