Chorizo & Bean Hotpot

This is a quick and easy dinner idea that we cook regularly, both at home and on the road.

2 chorizo, sliced
1 medium onion, diced
1 can baked beans
1 can crushed tomatoes
2 tablespoons maple syrup
A good dash of Tabasco sauce to your taste

Fry the onions and chorizo until the onion is opaque and the chorizo has browned and cooked. Add the beans, tomatoes, syrup and Tabasco and heat well. Serve on toast.

Note: some brands of chorizo are drier than others so you may be able to easily remove the skin before slicing if preferred. If you don't have maple syrup, substitute brown sugar (perhaps 1 slightly heaped tablespoon to start with) and chili powder can be substituted for the Tabasco sauce.

Serves 4 modest appetites and 2 hearty ones. :D

Chuck, I always have a couple of chorizo in the freezer, baked beans and tinned tomatoes in the cupboard so this is a no-brainer after a busy day's travel or sightseeing. Dot you are such a spoil sport. :P
