Happy Hour Dip

Image this dip yesterday for an Australia Day party and it was very popular. It makes quite a lot.

250gr bacon, diced finely
1 medium onion, diced, finely
1/2 capsicum, diced finely
250 gr light cream cheese
1 teaspoon curry powder
2 cups grated cheese
300ml light cream

Fry the bacon till cooked. Remove from pan and fry the onion and capsicum. Return bacon to pan and add the curry powder. Cook for a minute or so. Add the room temperature cream cheese and stir over medium heat until melted. Add the grated cheese and cream and stir till all cheese is melted and cream incorporated and hot.

I served this in a cob loaf that I had cut the top off and removed most of the inside (leave about a half inch all round). Place on a baking tray with the torn up bread and lightly bake till crisp. You will need more bread or a nice idea is raw carrot, celery, capsicum or cauliflower to dip in.

Be warned. It is very moreish so I tried to cut the fat down by using "light" everything. Couldn't get light bacon though. ;-) But short cut bacon is fairly lean but does cost more.

As I said, it does make a lot so if making for a smallish group I would portion it before adding the cream and only add it when heating to serve. Would divide into thirds if only for say 4 or 6 people depending on what else is on offer.
