Due to inclement weather I cooked this inside however it is a camp oven recipe.
My contribution to St Patrick’s Day
Ingredients
200 grams thick bacon ,diced
800 grams chuck steak
3 tablespoons plain flour
2 medium onions ,chopped
3 cloves garlic ,minced
4 medium potatoes, large diced
2 large carrots , large dice
2 ribs celery ,large dice
2 parsnips, diced
1 can Guinness
1 cup beef stock
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
1 teaspoon thyme
1 teaspoon rosemary
2 bay leaves
Salt and pepper to taste
Method
Dice the beef into large bite sized pieces. Sprinkle with some salt, pepper and the flour and toss to coat. Set aside.
Fry the bacon in a camp oven until done then remove it with a slotted spoon, leaving the bacon drippings in the pan.
Working in batches and being careful not to overcrowd the pieces, generously brown the beef on all sides. Transfer the beef to a plate and repeat until all the beef is browned.
Add the onions and fry them, adding more oil if necessary, until lightly browned, about 10 minutes. Add the garlic and cook for another minute.
Add the vegetables and cook for another 5 minutes.
Add the Guinness and bring it to a rapid boil, deglazing the bottom of the pot (scraping up the browned bits on the bottom). Boil for 2 minutes.
Return the beef and bacon to the pot along with the remaining ingredients and stir to combine.
Reduce the heat to low, cover and simmer for 2 hours.
Add salt and pepper to taste.

Irish soda bread is not unlike our damper
Ingredients
4 cups of flour
1 1/2 teaspoons baking soda (Bicarbonate Soda)
1 teaspoon salt
2 cups buttermilk
Method
Mix dry ingredients thoroughly in large bowl. Mix in buttermilk until you can no longer stir. Turn out onto a floured surface and knead gently until all the liquid is absorbed into the flour.
Mold into a mound, slice a cross into the top and bake in a high heat for 35 minutes

Oh that looks lovely, will add those things to the shopping list, pity I can't taste but I'm sure the Gman will. I take it the flour to use is Plain flour?
