Female pork is the best because of the hormone oestrogen. This is the soft hormone, males have some of this hormone but as you will know the male hormone Testosterone is the stronger (tougher) one. The female pork is also a lighter pink than the male pork and also the smell is not as strong with the female pork. Yes you can ask for female pork but the butchers won't know the difference unless they especially order it. Dot, Most of what you 'made up' is correct. I know guys that catch piglets and nut them when they are little. Makes the pork sausages taste better apparently.
